![]() | Remove the legs Place the chicken breast side up on a solid cutting board. Pull one leg away from the body and cut through the skin between the body and both sides of the thigh. Bend the whole leg firmly away from the body until the ball of the thighbone pops from the hip socket. Cut between the ball and the socket to separate the leg. Repeat with the other leg. | |

| Cut Carcass in Half Cut through the cavity of the bird from the tail end and slice through the thin area around the shoulder joint. Cut parallel to the backbone and slice the bones of the rib cage. Repeat on the opposite side of the backbone. | |

Now that you have all of that wonderfully cut pieces of chicken here are some options as to what can be done with them.
| BAKED CHICKEN PIECES | Grease 8 x 13 inch Pyrex dish. Fill dish one layer deep with chicken pieces. Add salt and pepper. Add 2 cans cream of mushroom soup (undiluted). Cover with foil; bake at 325 degrees for 2 hours. |
| BEER BATTER CHICKEN | Buy any beer batter in a box and follow instructions on back. Once the batter is made dredge chicken and deep fry at 350 degrees for 3 to 6 minutes depending on how big the chicken is. |
| FRIED CHICKEN | Take 2 to 3 eggs and whisk them together in a bowl. In another bowl take flour mixed with some salt, pepper, dried parsley, oregano, and basil. Then take a piece of chicken and dunk it first in the egg, hold it above the bowl and let some of the excess drip off, then dredge it in the flour and place it in a hot pan and sear (let each side get brown from the heat but not totally cooked) each side for about 2 minutes. Then place the entire pan, with all the chicken, into an oven preheated to 375 degrees for 35 to 45 minutes. |
| ITALIAN CHICKEN | Par boil(place chicken pieces into a boiling pot of water for 5 to 10 minutes until they turn white) your chicken pieces and them marinate them in some regular Italian salad dressing for 15 to 20 minutes. Then barbecue them for 10 to 15 minutes ( about 6 minutes per side). |

| CHILI FOR FOUR | You will need,1 pound ground beef, 1 (14.5 ounce) can canned diced tomatoes, 1 (15 ounce) can kidney beans, drained, and 1 (1.25 ounce) package chili seasoning mix. Crumble the beef into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain off grease, and mix in the tomatoes, kidney beans and chili seasoning mix. Reduce heat to medium, and simmer for 15 minutes. |
| SPAGHETTI CARBONARA | You will need; 1 pound spaghetti, 1 tablespoon olive oil, 8 slices bacon, diced, 1 tablespoon olive oil, 1 onion, chopped, 1 clove garlic, minced, 1/4 cup dry white wine (optional), 4 eggs, 1/2 cup grated Parmesan cheese, 1 pinch salt and black pepper to taste, and 2 tablespoons grated Parmesan cheese. In a large pot of boiling salted water, cook spaghetti pasta until al dente. Drain well. Toss with 1 tablespoon of olive oil, and set aside. Meanwhile in a large skillet, cook chopped bacon until slightly crisp; remove and drain onto paper towels. Reserve 2 tablespoons of bacon fat; add remaining 1 tablespoon olive oil, and heat in reused large skillet. Add chopped onion, and cook over medium heat until onion is translucent. Add minced garlic, and cook 1 minute more. Add wine if desired; cook one more minute. Return cooked bacon to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together. Add beaten eggs and cook, tossing constantly with tongs or large fork until eggs are barely set. Quickly add 1/2 cup Parmesan cheese, and toss again. Add salt and pepper to taste (remember that bacon and Parmesan are very salty). Serve immediately with chopped parsley sprinkled on top, and extra Parmesan cheese at table. |
| ROAST CHICKEN | You will need; 1 (3 pound) whole chicken, 1 tablespoon olive oil, 1/4 teaspoon salt, 1/4 teaspoon ground black pepper, 1/4 teaspoon dried oregano, 1/4 teaspoon dried basil, 1/4 teaspoon paprika, and 1/8 teaspoon cayenne pepper. Preheat oven to 450 degrees F (230 degrees C). Rinse chicken thoroughly inside and out under cold running water and remove all fat. Pat dry with paper towels. Put chicken into a small baking pan. Rub with olive oil. Mix the salt, pepper, oregano, basil, paprika and cayenne pepper together and sprinkle over chicken. Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 400 degrees F (205 degrees C) and continue roasting 40 minutes, to a minimum internal temperature of 180 degrees F (85 degrees C). Let cool 10 to 15 minutes and serve. |
